Ingredients:
2 bunches mustard greens, well washed
1 lb. ham or thick bacon, cut into cubes
1 yellow onion, cut in 1/4 inch slices
2 cups or more water
1 tsp brown sugar, optional
Directions:
Wash mustard greens 3 or 4 times in fresh water, draining them each time (there's nothing worse than gritty mustard greens). Then strip the leafy part from the stems and throw the stems in the compost bin.
In a large pan, fry bacon,or ham chunks until brown. Remove and fry onions until brown. Put everything back into the pan and add mustard greens. Stir and fry all this until greens start to wilt. Add 2 cups of water and cook until tender. Add more water if necessary.
If desired, add a spoon of brown sugar to the pan to sweeten the greens. Stir frequently on medium heat so they don't burn. Tradtionally served with black-eyed peas, baked ham, and cornbread.
Variation:
You can substitute or mix mustard greens with collard greens, kale and turnip greens.
